Almond Macaroons cookie recipe

Ingredients :

  • 1 lb almond paste
  • 2/3 cup sugar, plus more for sprinkling cookies
  • 5 oz egg whites (about 5 large)
  • pinch of salt


Preparation and Cooking Instructions :

  1. Preheat oven to 350°F.
  2. Line a baking sheet with a piece of parchment paper. Using a marker, trace twenty 2 ½" circles on parchment; turn paper-marked side down.
  3. In the bowl of an electric mixer fitted with the paddle attachment, beat the almond paste and sugar on medium-high until well combined.
  4. Add the egg whites one at a time, beating to incorporate after each addition. Add salt, and beat to combine.
  5. Transfer to a pastry bag fitted with a plain, round 3/8" tip. Starting in the center of the circles, pipe meringue, working outward in a spiral pattern. Sprinkle with sugar.
  6. Bake until set and edges are beginning to brown, 15 to 18 minutes.
  7. Remove from oven, and transfer to a wire rack to cool.
