Ingredients :
- 1 lb almond paste
- 2/3 cup sugar, plus more for sprinkling cookies
- 5 oz egg whites (about 5 large)
- pinch of salt
Preparation and Cooking Instructions :
- Preheat oven to 350°F.
- Line a baking sheet with a piece of parchment paper. Using a marker,
trace twenty 2 ½" circles on parchment; turn paper-marked side
down.
- In the bowl of an electric mixer fitted with the paddle attachment,
beat the almond paste and sugar on medium-high until well combined.
- Add the egg whites one at a time, beating to incorporate after each
addition. Add salt, and beat to combine.
- Transfer to a pastry bag fitted with a plain, round 3/8" tip. Starting
in the center of the circles, pipe meringue, working outward in a spiral
pattern. Sprinkle with sugar.
- Bake until set and edges are beginning to brown, 15 to 18 minutes.
- Remove from oven, and transfer to a wire rack to cool.
