Ingredients :
- 1 cup quick-cook brown rice
- 1 onion, chopped
- 2 cups chicken stock
- 3-4 leaves fresh English spinach
- ¼ cup grated low-fat cheddar
- 2 tbsp toasted pine nuts
Preparation and Cooking Instructions :
- Combine rice, onion and stock in a tight fitting microwave dish and
microwave for 20 minutes.
- Trim stalks from spinach leaves and shred finely.
- Add spinach and cook for a further minute or until rice is tender
and liquid absorbed.
- Garnish with low fat cheddar cheese and pine nuts.
