Spinach and rice soup recipe - Minestra con riso e spinaci

Ingredients :

  • 3 medium carrots
  • 3 celery stalks
  • 1 chopped onion
  • 7 oz chopped bacon
  • 9 oz rice
  • 3½ pints broth or cubes
  • 1½ lb spinach, preferably fresh
  • 3 tbsp extra virgin olive oil
  • ½ glass dry white wine
  • salt and pepper, to taste


Preparation and Cooking Instructions :

  1. Wash the carrots and the celery carefully, chop into pieces and put in a frying pan to brown, on medium heat, with the bacon, onion and olive oil.
  2. Add the rice and toast. Stirring all the while add the wine and let it evaporate and add the broth little at a time.
  3. Wash and chop the spinach and add to the rice, adding more broth and cooking on moderate heat.
