Cauliflower and Potato Curry
Ingredients
5 tbsp oil
1 tspn cumin seeds
1 lb cauliflower florets
8oz potatoes, cooked and cut into ¾ inch cubes
1 tspn ground cumin
½ tspn ground coriander
¼ tspn turmeric
¼ tspn curry powder
1 fresh green chilli, finely chopped
Salt
Freshly ground black pepper
Preparation & Cooking Instructions
Heat oil in a large frying pan.
Add cumin seeds, cover pan and sizzle for 5 seconds, shaking pan occasionally.
Remove the lid, add cauliflower and cook until brown spots appear.
Cover pan again, lower heat and cook until cauliflower is nearly done, but still crisp.
Add potatoes, cumin, coriander, turmeric, curry powder and green chilli, with salt and pepper to taste.
Cook very gently until potatoes are heated through.
Serve hot.
