Chick Pea Fritters
Ingredients
8 oz chick peas
1 onion, chopped
2 cloves garlic, crushed
1 oz fresh parsley, crushed
2 small chillies, finely chopped
1 tbsp chopped fresh coriander
½ tspn ground cumin
2 eggs
Freshly ground black pepper
3 tbsp flour
2 tspn baking powder
Oil for frying
Preparation & Cooking Instructions
Soak chick peas in a glass bowl, cover with water for 48 hours.
Change water daily.
Drain chick peas and place in a food processor with onion, garlic, parsley, chillies, coriander, cumin and eggs and pepper to taste.
Process until smooth.
Stir in flour and baking powder.
Heat oil in a large frying pan.
Form chick pea mixture into patties and cook in batches in hot oil until golden.
