Masala Curry Paste
Ingredients
3 tbsp grated fresh root ginger
1 tspn ground turmeric
1 tspn ground cloves
2 cloves garlic, crushed
2 oz fresh coriander leaves
2 oz fresh mint leaves
1 tspn ground cardamom
4fl oz cider vinegar
2fl oz groundnut oil
2 tspn sesame oil
Preparation & Cooking Instructions
Combine ginger, turmeric, cloves, garlic, coriander, mint, cardamom and vinegar in a food processor or blender and process until well combined.
Heat groundnut and sesame oils over gentle heat in a small saucepan.
Add spice mixture and cook, stirring, until mixture starts to bubble.
Remove pan from heat, allow mixture to cool.
Scrape it into a clean jar, seal tightly.
Store in a refrigerator until required.
